Lemon Sorbet

Lemon Sorbet

A delightful frozen treat that's low-fat too.
This makes a perfect palate-cleanser between courses.

  • 1/2 cup fresh lemon juice
  • 1/2 cup sugar
  • 1/2 cup water

Mix sugar and water in saucepan and bring to a boil, then turn off heat. Cool and then add lemon juice. Pour into shallow dish and freeze until firm.

When firm, blend sorbet in a food processor (in batches) until smooth, then return to shallow dish and re-freeze.

* Note: do not skip the blending stage... it makes a HUGE difference in the texture of the sorbet.
