Bruschetta-Style Salad with Fresh Mozzarella
Give your salad some zing with the flavors of bruschetta.
Fresh mozzarella makes a wonderfuly creamy addition
For salad:
- lettuce of your choosing
- plum tomotoes, sliced into wedges
- fresh basil leaves, cut into strips
- fresh mozzarella, either in small balls or cut into pieces
- kalamata olives
For dressing:
- 2 tsp fresh lemon juice
- 2 tsp balsamic vinegar
- 1/3 cup extra-virgin olive oil
- salt and pepper
In individual bowls, top greens with several tomato wedges, 3 balls
of cheese, 3-4 olives, and a pinch of basil. Top with dressing.
