Simple summer cocktail recipe
I love summer entertaining. It’s a close second for me to throwing Christmas parties. I am always on the lookout for tasty new signature cocktails to serve my guests so when the folks with Sandra Lee contacted me about trying out her new Cocktail Time Margaritas, I couldn’t refuse! I received two bottles — a traditional lime and a strawberry.
I am a big fan of Prosecco for summer cocktails, but then I tend to be a huge fan of carbonation at any time! I altered recipes found online to come up with my version of a Pink Flamingo cocktail.
I find it easier when entertaining to make a pitcher at a time instead of doing one glass. This recipe is perfect for that. Simply mix: one bottle of chilled Prosecco (I love Costco’s Kirkland brand for mixed drinks), 1/4 bottle of chilled Sandra Lee Cocktail Time Strawberry Margarita, and 1/2 cup lemon juice. Stir slowly and add sliced strawberries to the pitcher. Pour into a hurricane glass garnished with a whole strawberry and serve!
How does it taste? Refreshing! I also tried the Sandra Lee Cocktail Time Strawberry Margarita straight from the bottle and it was great on its own. You can easily blend it up with ice to make a frozen strawberry or lime margarita or serve it straight on the rocks.
On our most recent trip to Sanibel, I purchased some really cute flamingo fabric from a a shop called Three Crafty Ladies (also available for purchase online). We can’t go to the island without stopping there at least once! This fabric was perfect to go with my new drink. I had my aunt cut them to cocktail napkin size and then used her serger to go around the edges with a fun, pink color to match the flamingos.
I decorated the recipe card with a darling flamingo printable I purchased on Etsy from Tracey Gurley Designs. I love displaying cocktail recipes and menus in my IKEA Tolsby frames.
