I fell in love with the Butterbeer served at the Wizarding World of Harry Potter at Universal Studios the first time we visited, so we came up with our own version. But when my family went to the park a second time, I paid even closer attention. I immediately noticed two differences between our original version and theirs:

  1. The actual drink part at the park didn’t have a lot of flavor.
  2. The foam head at the park was slightly fizzy and had added flavor.

So… I’ve been working since then on how to improve our Butterbeer recipe to better match the park version. Here’s my modified recipe:

BUTTERBEER RECIPE

Combine heavy whipping cream, powdered sugar, 1 tsp of vanilla butter nut flavoring, and the meringue powder into a squirt bottle and shake until it starts to thicken.   Add the remaining 1 tsp of the vanilla butter nut flavoring to 12 oz. of the cream soda and gently stir to combine. Squirt cream mixture on top and enjoy!

The meringue powder adds the slight fizz like the foam at the park, and even though the park’s soda didn’t have a very strong flavor, I still wanted to add some just because I think it tastes better!

    Hey, I’ve never seen meringue powder before.. can you get it easily or would you have to go to a specialist shop?

    It’s easy to find. You can find meringue powder online or you can find it at Michael’s in the cake decorating aisle. Some grocery stores might have it as well with their cake making supplies.

    My local Walmart has a wedding area with lots of cake decorating supplies. It is apart from the normal baking isle though. They carry the meringue powder there, Wilton brand. So just be on the lookout, some stores are sneaky and keep items in odd places ;)

    I am going to make several punch bowls of this for a Girl Scout event. Can I mix up the cream, sugar and meringue powder ahead of time or will it get stiff? (Meringue powder is used to stiffen icing)

    Michelle, it does get stiff. I would leave out the meringue powder if you are going to make a big batch of it and want to make it up ahead of time. It will still taste great! I would also wait to shake the cream and sugar until you are ready to use it. Have a great time!

    Jasmine, I’ve never tried this recipe in a slushie machine, but I do know that they served a frozen version at Universal when we were there. Sounds like it would be fun to try! If you do, please let us know how it comes out. And Happy Birthday, too! :)

    Danielle, this recipe calls for 12oz of soda, which is 1.5 cups. To me, that is a single serving, but if you are serving to a large group of people, you could stretch it out and give smaller servings.

    Also, the park’s version is heavy on the Splenda. I had a horrible aftertaste for two days! :-(

    I have since heard that the frozen version at the park does not contain sucralose, while the cold version does. I don’t know if that’s true or not, as I had tried both types.

    I checked the link you included for the butternut flavoring. Is it realy $30.00 or more. Wow! Expensive.

    Andy, the products in that price range on Amazon are for packs of multiple bottles (usually 6) so the price isn’t that bad. Check your local grocery store — you may be able to find it cheaper.

    I just made this, with some adjustments based on what ingredients I could find, and I loved it! I went to Harry Potter World two weeks ago and this recipe was extremely close, good enough for me that’s for sure! Here is what I changed:
    Couldn’t find meringue powder so I chose marshmellow fluff instead (2 tbsp) and couldn’t find vanilla butter nut flavoring so I used half butter flavor and half vanilla. It was amazing!! Thanks so much!

    Hi, I just checked the recipe after looking at the tutorial for the barrel of Butter beer. Any chance of getting the measurements for the recipe to fill that? I just happen to have the same drink dispenser:)

    Goodness, let me think. I believe I just added a 2 litre of the soda and some flavoring. I did it one 2 litre at a time so it wouldn’t get too warm or go flat. It doesn’t have to be exact to still taste yummy!

    You can buy vanilla-butter-nut flavoring online (check here) or in some grocery stores (Kroger, for example).
