The last things still growing in my small garden are some of my herbs. The basil and mint have long since died, but the sage and oregano is still hanging on, but just barely. Before the cold weather sets in for good, I wanted to capture as much of that herby essence as I could, so yesterday I dried a bunch of it.
Drying herbs is so easy! All you need is a simple dehydrator, which you can easily pick up in the $35 range. I use mine all the time to make beef jerky, but that’s a post for another day. Today, we’re talking about yummy herbs!
First I picked a bunch of fresh sage and oregano from my garden. Just look at these gorgeous plants!
Then wash them, pat them dry, and arrange them on the trays of the dehydrator.
Turn it on and let them go until dry and crispy. It should take 1-3 hours, depending on your machine. That’s it!
They may not look as pretty anymore, but the flavor is still there, and when I’m cooking for Thanksgiving this year, I’ll definitely be glad to have that sage to dig in to!

These are so much better than store bought!
Patting them dry and then layering them in between paper towels works very well, too. Depending on your microwave, it can be anywhere from 5-8 minutes.
You can also set your oven on its lowest setting and dry them that way. Gas ovens don’t even need to be turned on, just put the herbs on trays and let it sit in there overnight.
